they are DU difficulty levels.

Complete DU on very hard once to unlock Z1 difficulty, then complete Z1 difficulty once to get Z2 difficulty, then complete Z2 once to get Z3, complete Z3 to get the 'Strongest in the Universe' trophy, which adds to your percentage.

in the options menu there is a thing called "game diffeculty"

in main menu (where DU and DA and World Torny are etc.) go to Options, change it there
