How do you create your own buildings? When I try to place a roof on top of a few walls the roof just appears on the ground?

try holding the shift key and moving the mouse up and down - also try the ctrl key and alt keys for shaping land around the tile.

This is covered in one of the tutorials and the manual - the rest is just practice :D
