Well kinda.. Take the Gallardo for example.. take it up to 8ooo RPM (that's about 38ish MPH) and let go. Then tap "B" and the right trigger at the same time. the car should shoot to 9000 RPM and then run down to under 1000 still cruising at 40 without you having to press the trigger..
Also another neat trick is a rolling-revving-stop. do exactly the same but brake gently and keeping pressing the two. i havn't cracked it yet but i'm getting better...
